Central in Lima, Peru is named The World's Best Restaurant 2023, sponsored by S. Pellegrino & Acqua Panna, as well as The Best Restaurant in South America, at the awards ceremony for The World's 50 Best Restaurants 2023 held in Valencia, Spain, this evening.
20일 밤 스페인 발렌시아에서 S.Pellegrino & Acqua Panna가 후원하는 The World's 50 Best Restaurants 시상식이 열리면서, 미식 업계의 여러 인사가 참석했다. 리마의Central은 The World's Best Restaurant 2023뿐만 아니라 The Best Restaurant inSouth America2023도 수상했다.

Virgilio Martinez 및 Pía León의 두 셰프가 리마에 연 플래그십 레스토랑인 Central이 2022년 No.1이었던 코펜하겐의 Geranium에 이어 올해의 No.1에 올랐다. Geranium은 Best of the Best 명예의 전당에 입상했다.
2022년 순위에서 No.2이었던 Central은 지속가능성을 옹호하는 한편, 페루의 전통 및 역사와 더불어 연구기관인 Mater Iniciativa의 안내하에 페루 토종 재료의 독특한 생물다양성을 기리는 메뉴로 페루를 예찬한다. 바르셀로나의Disfrutar(No.2)와 마드리드의Diverxo(No.3)가 Central의 뒤를 이었다.
남미에서는 올해 순위에 아홉 개의 레스토랑이 이름을 올렸다. 그중 리마의Kjolle(No.28)과 보고타의El Chato(No.33) 두 곳은 올해 처음으로 순위에 진입했다. 아시아는 일곱 개 레스토랑의 이름을 순위에 올리며 그 뒤를 이었다. 싱가포르의Odette는 The Best Restaurant inAsia(No.14)로 선정됐고, 방콕의Le Du(No.15)와Gaggan Anand(No.17) 및 도쿄의Sézanne,Tokyo(No.37)는 처음으로 순위에 진입했다. The Best Restaurant inMiddle East& Africa로 선정된Trèsind Studio(No.11)와Orfali Bros Bistro(No.46) 등 두바이의 두 레스토랑도 올해 처음으로 순위에 진입했다.
